What are some good ways to cook it? You can roast it, grill it or broil it whole or sliced into thick medallions. Well-known chefs who are Del Terruño fans recommend using very high temperatures to sear the outer surface, while warming the interior to rare or medium-rare. If you cook it whole, let it rest for a good five minutes before carving it. Feeling adventurous? Try slow-roasting and water bath, also known as “sous vide” cooking. This method is especially good with the Petite Tenderloin from Del Terruño.
